2026 Trends: What Will Shape Menus, Marketing, and the Bottom Line in Restaurants
Bar & Restaurant News, December 9, 2025 | Amber Lam, assistant general manager at Hearth and Hill – Sugar House in Salt Lake City, Utah, believes Earl Grey will take the spotlight. “It might be the time for Earl Grey to shine again—or any other teas like chai,” she said. “Matcha is expensive and hard to get right now, so people are looking for the next matcha-esque thing. Earl Grey lattes are nice but Earl Grey cocktails elevate a space.” (Note: Bar & Restaurant Expo is co-located with World Tea Expo, so owners and operators can explore the many opportunities with tea.)
Hill Top Hospitality plans benefit dinner featuring its seven head chefs
Park Record, October 8, 2025 | “The atmosphere can easily appeal across generations without the appearance of management pandering,” says Brooks Kirchheimer, co-founder of Hill Top Hospitality. “An example of this is having a modern and inviting space across our restaurants and at the same time having subtle differences in different parts of the layout that allows those areas to be more inviting for certain guests. At our ‘Urban Hill’ restaurant, we have the main part of the dining room where more of the action is and the open kitchen, which could be more welcoming for those looking for a lively experience, and then we have smaller rooms that can be quieter and more wanted by others.”

Japanese cuisine takes center stage at Hearth and Hill’s next regional dinner
Park Record, August 11, 2025 | The concept for each dinner is decided collaboratively, Giles said, with chefs contributing ideas and guests weighing in afterward. “My chefs underneath me, it’s very important that they have ownership and they have pride in what they do,” he said. “So it’s a discussion of what everybody wants to do and getting some of their thoughts and their opinions in.”

Why the owners of Hearth and Hill stayed put after historic Sugar House fire
Axios, April 5, 2025 | Not even one of Salt Lake City’s worst blazes could deter restaurateurs Brooks and David Kirchheimer from opening Hearth and Hill, their fourth restaurant. State of play: A fire tore through The Residence at Sugar Alley in Sugar House on a late night in October 2022 as it was under construction. It burned for seven days, causing $59 million in damages. On the morning of the fire, the restaurant had received a highly coveted liquor license and building permit, according to Brooks. The Kirchheimers could have canceled their lease, but chose to stay and continue building.

“We’re excited to be a gathering spot for the community to come to and celebrate,” said Brooks Kirchheimer, co-founder of Hill Top Hospitality, which includes Hearth and Hill among its restaurants.

Fodors, December 19, 2024 | Speaking of higher prices, you won’t find special discounts like happy hours at Utah bars. “If [a bar] wants to run a happy hour or other alcohol special, they have to run it all day long and it can’t currently be on the menu,” says Brooks Kirchheimer, co-founder and co-owner of “Hill Top Hospitality”, which owns several restaurants in Salt Lake City and Park City. While you won’t see happy hours in Utah, you might see “Appy Hours,” which applies the happy hour concept to appetizers instead.
