Wine List
About Our Wine Program
Carefully curating a list that offers wines to all palates is important to us. We enjoy terroir driven wines. What does that mean? We like wines that indicate and demonstrate the unique landscape and quality of the place that they are from. The wines we like to promote are often unadulterated wines, we like to think of them as “minimal intervention” wines. From grape to bottle, any number of things can be “done” to a wine to alter it’s flavor, aromatics, and overall aesthetic. We do not feel like these wines belong on our list, because the more a wine is manipulated, the further it is removed from its place of origin. One important aspect of our list is the farming behind the wine itself. Organics, Biodynamics, Sustainability, Regenerative Agriculture, are all important practices in vineyard cultivation. At the end of the day, wine needs to taste good, but there is much more to the story of a wine than its taste, and we are cognizant of this and try to represent this truth in our list.
“Wine should be a pure reflection of its soils and of the entirety of its environment. We should question everything that takes us further away from that fact.” Nicolas Joly, Coulée de Serrant
